Greek Grilled Chicken Skewers
Here’s a seamless, sped-up method to make chicken breasts more manageable and flavorful thanks to Grecian Gourmet! A marinade of Greek vinaigrette primes the protein for a chargrilled finish. Serve yours solo or on a pita with hummus, salads and other Greek fixings.
1 bottle Grecian Gourmet Greek Vinaigrette
4 organic boneless, skinless chicken breasts, cut into 2-inch pieces
Fresh parsley, finely chopped to garnish
Salt and pepper, to taste
Pita bread, for serving
In a large container or Ziplock bag, pour Greek Vinaigrette. Add chicken, seal container or bag, and shake to evenly coat. Marinate in the refrigerator for at least 30 minutes. If using wooden skewers, soak them in water while the chicken is marinating.
When ready to cook, skewer the chicken, evenly dividing pieces between 6 and 8 skewers. Heat an oiled cast iron skillet or grill over medium high heat. Place skewers on grill and cook, untouched for 6 minutes. Flip and continue to cook for 5-8 more minutes, or until the internal temperature reaches 165 degrees. Garnish with parsley, salt and pepper. Serve with Naan or pita bread and some delicious Greek delicacies.
